Chef Redzepi, Why do you only use local ingrediets at NoMa

NoMa Restaurant (2 Michelin stars, ranked #1 in The World's 50 Best Restaurants sponsored by San Pellegrino and Acqua Panna), in Copenhagen, only serves local food. Policy of chef Redzepi is to avoid ingredients from abroad. I asked him why and he kindly explained me the two main raisons. Respect, producers, taste... are the main words in his answer.
