On Thursday, May 6th 2010, eleven of Italy’s top chefs gathered for lunch at Le Calandre restaurant to official found the Cavalieri della Cucina Italiana.

Seated around a single table, the chefs laid down the guidelines for their future collaboration, finding their voice and their strength in the same values of the Italian order of Knights: respect and loyalty.
The decision to establish a professional group arose from a mutual desire to protect and develop the culinary trade and the image of Italian cuisine.
The six principles uniting the Cavalieri della Cucina Italiana are:
I. Recognition of ingredients as the basis of culinary expression
II. Knowledge and respect of classic cuisine, but more importantly, a commitment to further develop the culinary arts
III. Dedication to the culinary profession strengthens relationships, allowing for the spread of authentic Italian cuisine
IV. Belief that culinary training and education provide are fundamental to spreading culture awareness and generate social benefits as well
V. Members bring their individual style to the group, creating an united voice to protect and develop the trade and image of Italian cuisine
VI. Reciprocal loyalty between equals.
The Cavalieri della Cucina Italiana is not an association created to protect the interests of its members, but rather a self-established group dedicated to promoting other like-minded individuals.
