Despite sounding like a French fine-dining restaurant, Le Du’s name is taken from the Thai word for ‘season’. So, it’s no surprise to learn seasonal Thai ingredients play a starring role here, with dishes influenced by French techniques. After training at the Culinary Institute of America, young chef Thitid ‘Ton’ Tassanakajohn sharpened his skills at world-class US restaurants Eleven Madison Park and Jean Georges. And a stint as judge on Top Chef Thailand has also gained Ton a large youth following. Le Du offers a choice of a four or six-course tasting menu, with the signature ‘khao cha’ (shrimp and pork pate with pickled radish and jasmine ice cream) not to be missed.
