Set in the boutique Fierro hotel with views over its beautiful grounds, Hernán Gipponi has become a ‘must-stop’ location for galloping gourmands eager to sample the country’s modern cuisine.
Here Argentine head chef Gipponi combines some of the more avant garde techniques he picked up during his time in Spain – he worked at the Guggenheim Bilbao and El Poblet in Denia, Valencia (now Quique Dacosta), both of which hold two Michelin stars – with more local textures and tastes to spectacular effect.
The restaurant’s crowning glory is its nine-course tasting menu that breathes new life into Argentine culinary traditions through experimentation with different temperatures and cooking techniques, evidenced in dishes such as slow-cooked egg with creamed corn and oven-cooked Spanish rice, sweet onions and squid. If you’re feeling flush, ask for the additional wine pairings from Fierro’s impressive cellar, which is watched over by executive sommelier and president of the Argentine Sommelier Association Andres Rosberg, no less.
