A passionate chef, culinary creativity and a beautiful location are the key ingredients in forging this outstanding restaurant. Chef-patron Jair Téllez built Laja in the Guadalupe Valley in 2001 with help from a group of local workmen who eventually became part of his team. Winemaker Andres Blanco later joined as co-proprietor and the restaurant has since gone from strength to strength.
With its own orchard, farm and vineyard contributing to the weekly-changing four and eight-course menus, Laja’s cuisine pays homage to the natural richness of the Baja California peninsula on which it sits, While continually creative, the underlying theme of Téllez’s dishes is strictly seasonal, with classic techniques respecting regional culinary traditions. Absent are starch white tablecloths, present instead are bare-wood tables and non-traditional crockery, completing Laja’s rustic, convivial and unpretentious offering.
