It takes broad experience at some of the world’s finest kitchens to oversee culinary operations at the lavish Fairmont Bab Al Bahr, and executive chef John Cordeaux has got it in spades. He has spent some 25 years working with the very best, and now he brings his expertise to such renowned restaurants as Marco Pierre White Steakhouse. Like the former three-Michelin-starred White, Cordeaux has picked up a number of plaudits in his time, not least Hotelier Middle East magazine’s Chef of The Year award in 2010.
