Bo Innovation is a ground breaking Chinese fine-dining restaurant, serving “X-Treme Chinese” cuisine, Alvin Leung is known around the world for his sense of adventure, humour and rock and roll that he injects into this Hong Kong hot spot. Bo Innovation is renovated with a modern and cozy interior design and is located at the heart of Wan Chai area of Hong Kong.
The executive chef Alvin Leung (or the self styled “Demon Chef”) showcases traditional, yet innovative dishes such as ‘’xiao lung bao’’ and ‘’lap mei fan’’ which are adapted with his unique brand of molecular gastronomy. Bo has an extensive wine list with up to 300 items for the guests to choose from. In May 2008, Alvin again upgraded his restaurant to give diners a more complete dining experience.

Alvin Leung Jr’s culinary career took off in 2003 while he was at the helm of one of Hong Kong’s most sophisticated private kitchens, Bo Innoseki. Unlike most Chinese restaurants where families share several dishes of food, Alvin served up individual multi-course meals of small dishes prepared with seasonal ingredients. As his reputation grew, Alvin had to relocate to accommodate the increasing number of people who wanted to try his food. He renamed the new restaurant Bo Innovation to reflect his exceedingly experimental style of cooking.
It was there that Alvin pioneered X-treme Chinese Cuisine – a combination of centuries old recipes with modern ingredients and cooking techniques. People had never tasted Chinese food like this. He tantalised gourmets and food aficionados with dishes like ‘smoked quail’s egg with taro crust topped with caviar’, ‘hairy crab soufflé with aged Jiangsu vinegar’ and deconstructions of the traditional Chinese favourites, ‘lap mei fan’ and ‘mui choy kau yuk’.
Alvin quickly became the toast of the town amongst the Hong Kong elite and Bo Innovation started winning awards and entries into the city’s most coveted restaurant guides. Food critics came from all over the world to try Alvin’s X-treme Chinese Cuisine and left behind a trail of reviews heaping praise on his new type of modern Chinese dining. Fame followed and celebrity chefs like Martin Yan, Anthony Bourdain and Gary Rhodes all requested appearances from Alvin on their television shows.
