Located just across from the Sands Theatre in Singapore’s Marina Bay Sands resort, DB Bistro Moderne blends traditional French bistro fare with contemporary flavours – including his collection of signature burgers and charcuterie – for an international dining experience with a Gallic accent. In Singapore internationally renowned chef patron Daniel Boulud re-interprets the classic Parisian bistro while sharing the energy and style of his acclaimed original Bistro Moderne in Manhattan’s Midtown.
The bistro style dining room includes a 15 seat bar as well as an informal lounge for casual dining and two private rooms that set eight guests each.




Executive chef Stephane Istel hails from Alsace, where he began cooking at the age of 15, but comes to Singapore via the Cote d’Azur, the Caribbean, New York and Vancouver. Istel has worked with Daniel Boulud since 2005, with his most recent positions include working as a sous chef in his New York Bistro Moderne and later as chef for Boulud’s Feast and Fetes Catering.

He was most recently executive chef of DB Bistro Moderne in Vancouver, which he opened in December 2008.
