Sky on 57

Helmed by arguably Singapore’s most accomplished chef Justin Quek, Sky on 57 focuses on modern Asian cuisine, delivered with Quek’s usual finesse and his emphasis on premium ingredients, techniques and flavors.

Located at the southern end of the Sands SkyPark, at Tower 1 of the Marina Bay Sands Hotel, the 12,000 square feet all-day restaurant contains a bar, lounge, main and private dining rooms, and an outdoor terrace that offers amazing ocean and city views, from dawn to dusk.

Marking his return after six years abroad operating fine-dining French restaurants, Quek’s menu at the 240-seater Sky on 57 marries South East Asian ingredients with European influences. The result is distinctive creations such as Nordic crab vermicelli, Maine lobster Hokkien Mee and Wagyu beef ‘cheek’ rendang; accompanied by authentic Asian sauces and home-made condiments.

“Sky on 57 showcases my Asian upbringing and the comfort food that I grew up eating, for instance, the ngor hiang that my grandmother used to cook for the family. I’m giving a modern interpretation to a familiar cuisine, using my European techniques to take homegrown food to a higher level. It’s about bringing out the best of both worlds and creating a fine balance. I’m very excited to be embarking on this new and exciting journey with Marina Bay Sands,” says Quek.

Private dining sections have been created by using glass panels and a tiered dining space allows clear views of the Singapore skyline from different levels.

Chef Justin Quek

Justin Quek grew up in Singapore but was trained in some of France’s top kitchens, including that of Roland Mazere’s Le Centenaire in Perigord, Jean Bardet in Tours, L’Oasis in Cote d’Azur and Hotel de Crillon in Paris. Across the English Channel, he spent time with Michel Roux Junior at the Roux brothers’ Le Gavroche and Waterside Inn. In 1992, he was appointed the personal chef of the French Embassy, making him the first Singaporean to be given such a grand opportunity.

When the World Gourmet Summit Awards Of Excellence was first introduced, he was the recipient of the first ever Chef Of The Year award. Quek is also founder of Les Amis, Singapore and Le Platane, Villa du lac and Fountain in Shanghai.
