Internationally acclaimed restaurateur Jean-Georges Vongerichten was honoured at this year's South Beach Wine and Food Festival in Miami with a tribute dinner to celebrate his culinary vision, which has seen a constellation of successful restaurants spanning the globe from the United States to Shanghai. The shining star is the three-Michelin-starred Jean Georges which draws on his "classical French training and on the energy of New York City". It focuses on Vongerichten's passion for vibrant Asian-influenced cuisine spiked with wild edible plants and oils, infused with herbs and spices. Think Halibut Steamed with Honshimeji Mushrooms and Lemongrass Consommé, Smoked Squab a L'Orange, and Heirloom Watermelon Gazpacho. Last year the restaurant celebrated its tenth anniversary.
