Troisgros
Who knew that when Jean-Baptiste Troisgros and his wife Marie opened a small restaurant with rooms in Roanne in 1930 that it would last until today? Their sons Jean and Pierre trained under some of the finest chefs in France so that they could transform their parents' excellent local establishment into a gourmet restaurant when they took over in the 1950s. Now Troisgros is in the hands of a third generation, Michel and his wife Marie-Pierre. You would expect a restaurant with so much history to be stuck in tradition, but Michel's cooking is profoundly modern. He stays true to the French style, but borrows global influences from his Italian maternal grandmother and his travels to Asia and the US.
