Alice Waters was ahead of her time when she opened Chez Panisse in bohemian Berkeley, California in 1971. Local, seasonal and sustainable, the touchstones of so many restaurants around the world today, were firmly on her agenda from day one and they still inform the daily changing four course, no choice menu today. Eating in the intimate, narrow dining room is like being invited to the world's best dinner party. Organic ingredients, meticulously sourced from a network of over 60 local suppliers, are allowed to sing in no-nonsense dishes, such as grilled and braised R&R Farm Pork with Muscat Sauce, Potato Puree and Chanterelles.
