Sergio Herman's stellar restaurant in the quaint Dutch market town of Sluis near the Belgian border, serves up dishes of extraordinary delicacy and precision. Oud Sluis presents a menu that combines local ingredients with a global repertoire, taking its influences from both Europe and Asia. An appetiser might be Langoustine with Lemon and Coffee, or Scallops Black and White followed by Quinoa and Oysters with Kaffir Lime and Beer. Herman's father, who ran a simple fish restaurant here, may not have presented such artful dishes, but seafood remains the heartbeat of the experience.
