Top chefs Claude Troisgros, Alex Atala and José Avillez at Lisbon Fish & Flavours in April

The world’s top chefs often hit the “food forum” circuit much like fashion editors make the Milan-Paris-New York runway show rounds. January is always a big month, because it’s when the Madrid Fusion takes place, in Madrid. But this January there was another gathering of high-wattage chefs at the Cook it Raw! in Collio, Italy: Massimo Buttura, Pascal Barbot, Réné Redzepi, David Chang, etc.

Last November, many of them hit Alicante, in Spain, for Lo Mejor de la Gastronomia. In attendance: Ferrán Adrià, Jean-François Piège, Pierre Hermé, Quique daCosta, Carlo Cracco and many other greats.

Every October, it’s time to head to Brazil for Mesa Tendências, a huge forum organized by food magazine Prazeres da Mesa. The latest edition had presentations by Alain Ducasse, Olivier Roellinger, Jordi Roca, Laurent Tourondel, Gérald Passedat and Mexico’s star chef Enrique Olvera.

This spring, the must-see event is Lisbon’s Fish & Flavours, which will homage Brazil.

Between April 10 and 18 – and therefore a mere week before the big awards ceremony where The World’s 50 Best will be announced in London – Lisbon will host top chefs like Brazil’s Claude Troisgros (Olympe, in Rio), Alex Atala (D.O.M., in São Paulo), Mara Salles (Tordesilhas, in São Paulo), Bel Coelho (Dui, in São Paulo) and Tsuyoshi Murakami (Kinoshita, in São Paulo).

Portugal’s own talents will also be there: José Avillez (of Tavares restaurant, and the country’s definitive rising star) and Luís Baena (Manifesto), among many others, have confirmed their presence.
