Its intimate dining room may seat just 20, yet Orana (meaning ‘welcome’ in several Aboriginal languages) is a giant of the modern Australian dining scene. In terms of technique, Jock Zonfrillo’s cooking owes as much to New Nordic cuisine as it does traditional Indigenous culture, with the words dried, cured, pickled and smoked scattered throughout the menus. A forager keeps the kitchen full of interesting native ingredients such as green ants, riberries and wattleseed, which Zonfrillo approaches with his trademark creativity. The wine list is equally focused on provenance with all of Australia’s major wine-producing regions deliciously represented.
