Sydney's Bulletin Place is all about fresh, seasonal products. As a result, the bar team create a menu of five new cocktails every day based on what they get from markets that morning – and on an array of novel ingredients they create. Take the ‘Spritz Naturel’, for example, which highlights local produce by combining Old Tom gin, lemon aspen, spearmint, ratafia and pét-nat sparkling wine. The approach also applies to its seasonally changing Australian wine list, as well as weekly changing craft beers.
