The first overseas restaurant from New York legendary restaurateur David Chang, this cool, contemporary spot in Sydney’s Star casino is as progressive as they come. Barbados-born head chef Paul Carmichael has transformed this branch of the Momofuku brand since taking the reins in 2015. Gone are the pork belly buns that made Chang’s name, replaced with a Caribbean take on contemporary Australian grub. An ever-changing 10-course taster is presented with a theatrical flourish as chefs serve up dishes and customers grind their own curry pastes with a pestle and mortar. All accompanied by a thumping rock/reggae soundtrack.
