Ghent’s 16-seater Chambre Séparée is run by maverick Belgian chef Kobe Desramaults, who famously closed his In de Wulf restaurant at the height of its success. The industrial-style dining room is the setting for a single tasting menu served at the kitchen counter, beyond which the gleaming kit includes a grill inspired by those used in the Basque Country. Desramaults revels in the theatre of cooking while remaining relaxed enough to change the records on a vintage hi-fi. Diners can expect 20-plus inspired small plates featuring seasonal fish and game, local vegetables and native cheeses.
