The cocktail menu at BarChef changes quarterly, overseen by co-owner Frankie Solarik. Quality is everything here, with only fresh ingredients making the cut and all infusions, syrups and bitters made in house – which all makes sense, given the establishment's name. The current list is split into three sections: 'Overture' (aperitifs), 'Parfumerie' (boozy and complex serves) and 'Modernist' (drinks made using molecular techniques). As for the space, it's dimly lit and sexy, all dark curtains and exposed brickwork, with a glowing back bar as its focal point.
