Widely thought of as the gold standard of vegetarian dining, this spacious restaurant twists Chinese classics away from their carnivorous background. Chef Pan Jianjun comes to hospitality after life in a Buddhist temple and sources many of the ingredients from local organic farms, but the restrictive monastic version of vegetarianism (no onions for a start) is given a miss for dishes that pack a flavour-filled punch. Textures and tastes are playful and challenge guests at each turn, like in the sweet-and-sour braised monkey’s head mushrooms paired with pineapple chunks, thin-sliced straw mushrooms and nuts. Truly at the helm of global vegetarian cooking.
