Taking its name from the phrase ‘Haku Rai Hin’, which means ‘things from abroad,’ Haku seeks to infuse Japanese delicacies with global influences. Haku is curated by Hideaki Matsuo of Michelin three-star Kashiwaya in Osaka, with chef Rob Drennan – of Maaemo fame – running day-to-day operations. The multi-course menu features the likes of kani with yuzu truffle, Jerusalem artichoke and hazelnut, or Kagoshima wagyu beef served with black garlic. The best seats here are by the open kitchen.
