Haku

Hong Kong, China

Taking its name from the phrase ‘Haku Rai Hin’, which means ‘things from abroad,’ Haku seeks to infuse Japanese delicacies with global influences. Haku is curated by Hideaki Matsuo of Michelin three-star Kashiwaya in Osaka, with exec-chef Agustin Balbi running day-to-day operations. The best seats here are by the open kitchen.
