Offering a 14 or 18-course omakase (chef’s choice) menu, Sushi Masataka prepares some of the finest sushi in Hong Kong at its eight-seat cypress-wood counter. Chef Masataka Fujisawa, who has more than 25 years of experience, flies in his fish from Tokyo and most other ingredients from the rest of Japan. Nigiri highlights might include Hokkaido wild salmon, five-layer toro sushi and ocean trout, while other dishes might include octopus, uni hand roll and conger eel wrapped in bamboo leaves. There’s also an excellent regional sake selection.
