The Macao outpost of the Michelin three-star Hong Kong establishment of the same name, this contemporary Italian restaurant earned its own star just five months after opening in 2015. The menu here – looked after by executive chef Antimo Merone – is similar to the Hong Kong flagship, interpreting Italian cuisine through a modern lens and putting the focus on premium ingredients and seasonality. Among the outstanding products that have featured on the menu are sirloin steak from the award-winning Mayura farm in Australia; marinated and seared Japanese scallops with a cauliflower puree, orange emulsion and roasted Italian mandarin, topped with river beluga caviar.
