The first restaurant in Asia from Peruvian maestro Mitsuharu ‘Micha’ Tsumura, whose Lima-based Maido topped Latin America’s 50 Best list for two consecutive years in 2017 and 2018. Opened in the MGM Cotai in 2018, Aji is inspired by Micha’s Japanese-Peruvian heritage and his Nikkei cuisine, which is a mix of techniques and ingredients of both cultures. Maido signatures such as the melt-in-the-mouth short rib, cooked for 50 hours and served with purple potato puree and black quinoa are available, as well as originals from chef de cuisine Edwin Guzman Navarro. Choose from the Aji ‘Experience’ (a nine-course, plus snacks, tasting menu) or pick and mix from hot and cold appetisers, ceviche and nigiri.
