Daily changing menus are fed by the group’s biodynamic farm in Lejre, alongside choice local producers. Sharing dishes include vibrant salads showcasing baby carrots, fennel and romesco, and the farm’s courgettes with hazelnut and pecorino. Local pork comes as rillettes or fried with salsa verde. But it’s the beef tartare with rye bread that people come back for. A list of all-natural wine make it the city’s first of its kind.
