Restaurant 108

Copenhagen, Denmark

Championing locality, seasonality and artistic presentation, with plenty of foraged, fermented and pickled fare. If it sounds familiar, that’s because 108 is the more affordable spin-off to Noma. Set in a utilitarian warehouse featuring pastel shades and slick Nordic design motifs, a no-rules approach leads here. Guests can opt to dine on family style sharing plates, a single dish or the full gamut of the tasting menu. The food itself is ambitious yet accessible. Korean-born chef Kristian Baumann proves he's at a culinary zenith with the likes of lamb with last year’s pickles and a miso-lacquered lozenge of monkfish.
