Housed in a historic pile dating back to 1898 yet with boldly minimal design, Maannos (meaning top soil) is a homage to Finland's landscapes in terms of both its interiors and food. Co-owners Jouni Rahikainen and Elmo Luoma-aho prove their commitment to sustainability by sourcing 90 per cent of the menu from Finland and giving vegetables a starring role. Expect to see frequent use of the words ‘pickling’ and ‘fermenting’ on the family style sharing menus and the drinks list, which focuses on house-infused Finnish spirits and seasonal mixers.
