Marc Veyrat (La Maison des Bois)
A ski-resort spa hotel is an unlikely setting for food of this calibre, but La Maison des Bois is built on the site of self-taught trailblazer Marc Veyrat’s family home. Here you'll dine, with a view of Mont Blanc, on crayfish ravioli in wasabi bouillon; asparagus in a béarnaise of polypode (a local plant); and lamb cooked in hay with thyme and black truffle. The Haute-Savoie is where Veyrat learned his trade, foraging for alpine herbs and flowers long before we heard about it from René Redzepi.
