La Maison Troisgros (Le Bois sans Feuilles)
Ouches, France
Home of a culinary dynasty and as close to sacred as any restaurant can be. Opened by Jean-Baptiste Troisgros and his wife Marie in 1930 in Roanne, the restaurant and hotel recently moved location to a secluded estate in Ouches, eight kilometres from the original La Maison Troisgros. Le Bois sans Feuilles (translating as ‘the wood without leaves’), as it is now known, carries on the traditions that have seen the establishment hold three Michelin stars for more than 50 years, with César Troisgros part of the fourth generation to cook in the esteemed kitchen. The sublime glass dining room – built around a 100-year-old oak tree – is designed to blend in with the surrounding nature.
