Don't go to Sosein and expect to pick and choose. Every meal is painstakingly curated by chef Felix Schneider and his team. What you get will depend on a mixture of the season and a soupcon of whim. Schneider's aim is to crystallise the essentials of his ingredients (Sosein roughly translates as essence) and balance them with contrasting and complementary tastes and textures. The meal may sound simple – a recent line up featured salad stalks, young vegetables, trout, pike-perch, lamb, strawberry and 'summer garden' – but it's been deliberated on down to the final crumb.
