A shadowy wing of Rivoli’s 10th-century castle makes an atmospheric setting in which to explore cutting-edge Italian cuisine. Since first opening the restaurant in 1994, Davide Scabin has been ruthless in his pursuit of creativity, constantly blurring boundaries through concepts like an ‘upside down’ menu (where courses appear in the opposite sequence to usual) and dishes such as liquid pizza. A selection of tasting menus include the likes of spaghetti with foie gras and coconut, and boiled chicken served over glowing embers, all accompanied by an irreverent selection of spirits and wines.
