Frebel, who cut his teeth at Copenhagen institution Noma, aims to express each season to the full in his tasting menus. And if the inaugural summer menu is anything to go by, you're in for a treat. The menu featured snack pineapple with yuzu in caramelized kelp oil, bee larvae cooked two ways and slow smoked maitake mushrooms infused with sake starter fungus and served in a pine stock.
