Opened in 2002 in a former shoe factory in rural Vaassen, De Leest takes its culinary cues from nature. Inspired by the Veluwe conservation area on the restaurant’s doorstep, chef Jacob Jan Boerma’s trademark cooking style sees seasonal Dutch produce lifted to new heights through the addition of fresh tones, sour accents and spices. Five, six and seven-course tasting menus include such dishes as sea bass, white asparagus and seaweed, and roast beef with a miso cream, fermented algae and crispy potato. Wine pairings come courtesy of talented sommelier Kim Veldman.
