A minimal fit-out in varying shades of grey focuses the attention on the contrasting textures of chef Bjørn Svensson’s – who ran the now-closed Michelin-star restaurants Oscarsgate and Fauna – six-course tasting menu. A large cabinet of micro-herbs gives a hint of what's to come: seasonal, locally-sourced Nordic cuisine. Turnip, egg and horseradish sits alongside langoustine, parsley and spruce shoots, all paired with carefully-chosen wines by Svensson's friendly team. True to form Svensson earned Galt a Michelin star on the first time of asking in 2018.
