Where Moscow’s cool kids flock for innovative food and sublime cocktails. It’s centred on a traditional pechka stove, but this is not traditional food. Georgy Troyan doesn’t ascribe an obvious national heritage to his menu; he rather cherry picks and reimagines the finest culinary elements across the Slavic lands. Starters are stand out with flavour mined from simple ingredients – think tartare with fried egg whites and silken yolk or homemade pastrami on charred lavash. Siberian cod with fennel cream, pike-perch with daikon and lemon foam, and slow-roasted barnyard hen lead the mains. A moody, concrete-clad room emanating surprising warmth completes it.
