Sidestepping the swell of the city centre, trendy Birch is found near St Petersburg’s Transfiguration Cathedral. Despite the name (the tree is a national symbol of Russia), expect a creative, globetrotting fusion menu with influences plucked from Asia to Latin America. The venture was launched by four talented young chefs, and boasts an affordable, upscale, yet unfussy menu. Stalwart dishes include tuna ceviche with strawberry, tomato and yuzu, crab bisque with wontons, pumpkin and truffle ravioli, and veal cheeks and pickles. Interiors, meanwhile, are a medley of Nordic-meets-Brooklyn – plenty of steel, pared-back pale wood and a slate grey palette.
