A smart, teal-clad dining room where gastronomic tasting menus lead the way. The name – shortened to Bobo – is a nod to Russia’s new creative class, and the food follows pace. It utilises Russian heritage, French technique, Nordic nods and local produce over four to ten masterful courses. Flavourful, elegant dishes might include sorrel soup with Arctic prawns, deer filet with smoked artichoke puree and pickled cherries, and raspberries with beetroot, coconut and sudachi sorbet. Plating is delicate and pared back, while small-producer wines make for excellent parings.
