Neon Pigeon draws influence from Tokyo – even its name is an homage to the city's signature style of illumination. As you might expect, Japanese flavours feature prominently, with several sake infusions and extensive list on offer. Cocktails on offer include the Ghost in the Still, which mixes gin, rosemary, yuzu and soda, and the Hojicha Daikiri, a concotion of black tea, rum, elderflower liqueur, lemon and mint.
