Shinji by Kanesaka
Locals have often declared Shinji by Kanesaka as the best traditional Japanese restaurant in Singapore. It is known for immaculate Edo-style sushi prepared by master chef Koichiro Oshino, who spent 20 years training under Kanesaka himself in Tokyo. While Shinji’s omakase sets are the highlight, those on a budget can opt for the Hana lunch set of nine nigiri pieces priced at about $55 on weekdays at the Carlton Hotel location. The St. Regis Hotel is home to a second location led by head chef Shunsuke Yoshizawa.
