Dubbed the ‘cellar in the sky’ thanks to its position atop Schapenberg hill, the minimalist dining room is housed in a glass promontory offering dizzying views. Frenchman Grégory Czarnecki’s style is one of artful simplicity, with an emphasis on the freshest seasonal ingredients, such as farm-reared Schapenberg lamb, rare herbs and heritage vegetables.
