Retro military-style lamps, cases filled with glass butterflies and custom-made leather banquettes characterise this restaurant’s quirky concept. Although it is part of British-born chef Luke Dale-Roberts’ portfolio, Wesley Randles heads up the kitchen where he reimagines opulent old-world dining with modern flare. Highly seasonal menus are heavy on ingredients such as French-inspired sauces and duck liver, although there are some international surprises, too, including Italian castagnole (deep-fried pastry morsels) cooked in coconut oil with white chocolate ice cream. An all-South African wine list includes some lesser-known regional varietals.
