A fine-dining favourite in Madrid for almost 20 years, Santceloni serves a 14-course tasting menu or à la carte alongside superlative service in its refined dining room within the Hesperia hotel. A degustation takes diners through ox tartare with corn, red prawn flambéed tableside in whisky and smoked ricotta ravioli with caviar, many of which can be ordered as separate mains if so wished. Part of its success is a team of four that have remained since the beginning, with chef Óscar Velasco, sommelier David Robledo, front-of-house manager Abel Valverde and pastry chef Montse Abellá.
