You’ll find Daniel Berlin’s eponymous restaurant – seating just 15 – in a tiny village on Sweden’s southernmost tip. It’s the triumphant result of New Nordic principles meeting an adoration for luxurious – sometimes challenging – ingredients. Think wafers of wildfowl-liver mousse with cinnamon, yeasted pancakes with vinegar pork and raw lamb diaphragm with crushed wild plants and dextrinized barely. Housed in a charming old cottage, guests are invited to take amuse bouche at the fire pit and petit fours with Berlin in his greenhouse after the main event.
