The well-paced tasting menus from Paris-trained chef Aylin Yazıcıoğlu showcase arresting flavour combinations – crab with green apple and lime; porcini agnolotti with sunflower seed nougat – and change every six weeks. Wine pairings, exclusively Turkish, are faultless.
