Cornerstone, the first solo venture of Tom Brown, former right-hand man to celebrated fish chef Nathan Outlaw, opened in 2018 in an unassuming corner of Hackney Wick in East London. The sleek, gunmetal-grey design sees an 11-stool kitchen counter take pride of place, with space for 35 more guests at well spaced-out tables. The menu – containing the likes of curried St Austell Bay mussels, clams, cucumber and basil, and whole monkfish tail with roast chicken butter sauce – demonstrates why Brown’s fish cooking has garnered such widespread acclaim. Happily, his desserts are no less impressive.
