Based within Blue Mountain School, Mãos is an intimate and immersive experience designed by founder James Brown and executive chef Edoardo Pellicano. Sixteen guests are welcomed each evening to enjoy dishes such as a dessert of baked celeriac with koji crumble and black truffle and small bites including toasted rice tacos with red prawn. Alongside a natural wine pairing, a 'soft pairing' featuring living juices based on symbiotic cultures from Mexican tibicos grains and tea mushroom cultures from northeastern China make for an intriguing match.
