With its cornerstones of simplicity and waste reduction, Matt Whiley's Scout, now settled into its new Hackney location, made its 50 Best Bars debut in 2018. Local ingredients are key for this sustainably minded cocktail bar, which champions British produce and utilises products from local foragers and growers. Some of these ingredients make their way into in-house ferments, others directly into cocktails, with some of the waste used to produce the bar food menu. Head downstairs for kegged-cocktail bar Gold Tooth, which has a changing roster of cocktails on tap, along with beer and wine.
