No.23 – Chez Dominique

Hans Välimäki is a self professed entertainer. A visit to Chez Dominique in Helsinki will tell you this immediately.

You can see what fun Hans has compiling the menu with such exciting offerings as an infusion of tar and silver birch used to recreate the smell of a sauna when you have used it, or “Wet Forest”, you guessed it, recreating the autumnal smells of a mulching forest floor.

Hans describes his menu as “totally weird!”. Lagoustine Lasagne or Lobster Toffee anyone? Our panel seem to think he is doing a pretty good job of entertaining them.
