Atxa brings Basque technique to Thailand

Why visit? A paradise for globe-trotting foodies, Aziamendi is the Thai outpost of superstar Basque chef Eneko Atxa. Part of the luxurious Iniala Beach House resort, the restaurant serves cutting edge dishes that take inspiration from Spain and Thailand.

What to eat: The current tasting menu is a retrospective of some of Atxa's most popular recipes, including The Garden – baby vegetables in a 'garden' made of tomato emulsion and beetroot soil, with smoky foie gras ashes (grilled foie gras coated in black salt).

Who's on the pass? Aisha Ibrahim – a rising star in her own right, who has worked in world-renowned kitchens, including Nihonryori RyuGin in Tokyo and Manresa in California, where she first met Atxa at a collaboration dinner.

What else? Diners are served different courses in different parts of the restaurant, starting with the Iniala art gallery, before moving outside to the garden, then on to the kitchen and finishing in the dining room.

Other projects: During Thailand’s low season Aziamendi pops up at events around the world. Recent destinations have included Malta, Hong Kong and Kuala Lumpur.
