Fêted as Peru's most influential chef, Gastón Arcurio has certainly brought his nation's cuisine to global attention, with a staggering 40 restaurants now open around the world. This destination in Miami's glitzy Brickell Key development is as plush as one might hope for a restaurant set within the Mandarin Oriental hotel, but the flavours remain as punchy as ever, with some South East Asian influence making its presence felt through the hands of executive chef Diego Oka. Naturally, there's an extensive selection of ceviches on the menu, including the Tiradito Nikkei, which mixes tuna tataki tiradito, green onion, tamarind leche de tigre, sesame butter and pickled vegetables alongside bites such as a trout tostada finished with smoked roe and charred avocado. You'll also find anticucho skewers and filled empanadas alongside larger dishes like Arroz con Mariscos: a blend of shrimp, octopus, wok-fried calamari, ají amarillo sauce made with the native Peruvian chilli variety and traditional criolla relish.
